A delicious and hearty dish featuring tender beef bites and crispy potatoes, all coated in garlic butter and herbs.

Ingredients

Meat and Potatoes

  • 1 lb beef sirloin (cut into 1-inch cubes)
  • 2 lbs baby potatoes (halved)
  • 0.5 cup butter (divided) ((2 tbsp for beef, 6 tbsp for potatoes))
  • 4 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • to taste Salt and pepper

Instructions 

  • Boil halved potatoes in salted water for 8-10 minutes, then drain and steam dry for 1-2 minutes.
  • Pat beef dry, season with salt and pepper. Brown in 2 tbsp butter over medium-high heat, 1.5-2 minutes per side. Transfer to plate.
  • Add remaining butter and cook potatoes cut-side down until golden, 10-15 minutes.
  • Add garlic, rosemary, thyme; cook 1 minute. Return beef, toss gently, cook 2 minutes.
  • Stir in parsley, adjust seasoning, and serve immediately.

Notes

Ensure beef is cooked to your preferred doneness and adjust seasoning as needed.
