A hearty and flavorful grain bowl featuring roasted spiced squash, sautéed mushrooms, and a curried yogurt sauce, perfect for a nutritious meal.

Ingredients

Grains

  • 0.5 cup red, white, or brown rice, quinoa, or barley
  • 3 tablespoons olive oil
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon freshly ground black pepper
  • 0.75 pound delicata or acorn squash (halved, quartered, sliced)
  • 8 ounces cremini or button mushrooms (trimmed, sliced)
  • 1 small red onion (sliced 1/2" thick)

Yogurt Sauce

  • 0.5 cup Greek-style plain full or low-fat yogurt
  • 1.5 teaspoons fresh lemon juice
  • 0.25 teaspoon curry powder

Vegetables & Greens

  • 2 cups baby greens such as watercress or arugula

For serving

  • Lemon wedges and cilantro leaves (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Cook grains with 1/2 tsp. salt according to package instructions.
  • Whisk 3 tbsp. olive oil, pepper, cinnamon, and 3/4 tsp. salt. Toss squash, mushrooms, and onion in mixture. Roast on a baking sheet for 25–30 minutes until tender and browned.
  • Mix yogurt, lemon juice, curry powder, and 1/8 tsp. salt. Divide sauce into bowls, add cooked grains, vegetables, greens, and garnish with lemon and cilantro if desired.

Notes

Feel free to customize with your favorite greens or additional toppings.
