Ingredients
Grains
0.5cupred, white, or brown rice, quinoa, or barley
3tablespoonsolive oil
0.25teaspoonground cinnamon
0.25teaspoonfreshly ground black pepper
0.75pounddelicata or acorn squash(halved, quartered, sliced)
8ouncescremini or button mushrooms(trimmed, sliced)
1smallred onion(sliced 1/2" thick)
Yogurt Sauce
0.5cupGreek-style plain full or low-fat yogurt
1.5teaspoonsfresh lemon juice
0.25teaspooncurry powder
Vegetables & Greens
2cupsbaby greens such as watercress or arugula
For serving
Lemon wedges and cilantro leaves(optional)
Instructions
Preheat oven to 400°F (200°C). Cook grains with 1/2 tsp. salt according to package instructions.
Whisk 3 tbsp. olive oil, pepper, cinnamon, and 3/4 tsp. salt. Toss squash, mushrooms, and onion in mixture. Roast on a baking sheet for 25–30 minutes until tender and browned.
Mix yogurt, lemon juice, curry powder, and 1/8 tsp. salt. Divide sauce into bowls, add cooked grains, vegetables, greens, and garnish with lemon and cilantro if desired.
