Instructions
Whisk together marinade ingredients in a small bowl.
Toss chicken with two-thirds of the marinade; marinate for 10-15 minutes.
Spread vegetables on a baking sheet, drizzle with remaining marinade, and toss to coat.
Add chicken to the sheet and bake at 425°F (220°C) for 30 minutes.
Top with olives and feta, then bake for another 10-15 minutes until cooked through.
Sprinkle with chopped parsley before serving.
