A flavorful and easy Greek-inspired chicken dinner baked on a sheet pan with fresh vegetables and herbs.

Ingredients

Marinade

  • 0.5 cup olive oil
  • 1 lemon lemon (juiced) (about 3 tablespoons)
  • 4 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper

Main ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 1 medium zucchini (halved lengthwise and sliced)
  • 1 yellow yellow bell pepper (chopped into 1-inch pieces)
  • 0.5 large red onion (thinly sliced into wedges)
  • 1 pint cherry or grape tomatoes
  • 0.5 cup kalamata olives (pitted)
  • 0.25 cup feta cheese
  • 2 tablespoons finely chopped fresh parsley

Instructions 

  • Whisk together marinade ingredients in a small bowl.
  • Toss chicken with two-thirds of the marinade; marinate for 10-15 minutes.
  • Spread vegetables on a baking sheet, drizzle with remaining marinade, and toss to coat.
  • Add chicken to the sheet and bake at 425°F (220°C) for 30 minutes.
  • Top with olives and feta, then bake for another 10-15 minutes until cooked through.
  • Sprinkle with chopped parsley before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
