Instructions
Preheat oven to 350°F. Sauté onion and bell pepper in olive oil for 3-4 minutes.
Add ground turkey and cook until browned; stir in seasonings.
Mix in beans, half of the enchilada sauce, corn, and chiles. Layer tortillas, top with remaining sauce and cheese.
Bake for 20-25 minutes until bubbly; broil 2-3 minutes for golden top. Garnish and serve.
Notes
Use fresh or frozen corn for best flavor. Adjust spice level with chili powder.
