A flavorful and hearty skillet dish combining ground turkey, green chiles, sweet corn, and cheese, baked to perfection for a satisfying meal.

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 medium Red onion (finely diced)
  • 1 green bell pepper Green bell pepper (finely diced)
  • 1 lb Ground turkey
  • 2 tsp Kosher salt
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.25 tsp Chili powder
  • 1 15.5 oz can Great northern beans (drained)
  • 12 oz Green enchilada sauce (divided)
  • 4 oz Diced green chiles (with juice)
  • 4 ears Sweet corn (cut off of the cob)
  • 10 white corn tortillas White corn tortillas (quartered)
  • 10 oz Pepper jack cheese (shredded)

Garnish

  • Fresh sweet corn, avocado, queso fresco, and cilantro (for garnish)

Instructions 

  • Preheat oven to 350°F. Sauté onion and bell pepper in olive oil for 3-4 minutes.
  • Add ground turkey and cook until browned; stir in seasonings.
  • Mix in beans, half of the enchilada sauce, corn, and chiles. Layer tortillas, top with remaining sauce and cheese.
  • Bake for 20-25 minutes until bubbly; broil 2-3 minutes for golden top. Garnish and serve.

Notes

Use fresh or frozen corn for best flavor. Adjust spice level with chili powder.
