Ingredients

Salmon

  • 4 pieces salmon fillets, skin on, about 6 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder

Avocado Salsa

  • 2 ripe avocados ripe but firm avocados, diced
  • 1 cup cherry tomatoes, quartered
  • ¼ cup red onion, finely diced
  • 1 jalapeño seeded and minced (optional)
  • ¼ cup cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Instructions 

  • Pat the salmon dry, brush with olive oil, and season with salt, pepper, paprika, and garlic powder.
  • Let the salmon sit at room temperature for 15 minutes, then grill skin-side up for 4-5 minutes, flip and cook 3-4 minutes until flaky.
  • Mix diced red onion, jalapeño, lime juice, and salt; let sit 5-10 minutes.
  • Add cherry tomatoes and cilantro, fold in diced avocados, and season to taste.
  • Serve the salmon topped with the avocado salsa.

Notes

Ensure not to overcook the salmon for best texture.
