A flavorful and customizable burrito bowl featuring seasoned ground beef, rice, and fresh toppings, perfect for a quick and satisfying meal.

Ingredients

Meat and Rice

  • 1 pound lean ground beef (80/20 or leaner)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup water
  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • 1 unit juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon butter or olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (grilled or canned, drained)
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 avocado diced or sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sour cream
  • to taste Salt and pepper (Adjust as needed)
  • to taste Salt (for rice and seasoning)
  • optional red pepper flakes (for extra heat)

Toppings

  • 1 unit hot sauce, for drizzling
  • 1 jalapeño sliced (optional)
  • for garnish Fresh cilantro leaves
  • for serving Lime wedges (on the side)

Instructions 

  • Rinse rice, then cook in boiling water or broth for 15-20 minutes. Fluff and stir in lime juice, cilantro, and butter. Keep warm.
  • In a skillet, sauté onion and garlic in olive oil until softened. Add ground beef, cook until browned, then stir in taco seasoning, tomato sauce, and water. Simmer 5-7 minutes.
  • Assemble bowls starting with rice, then add seasoned beef and toppings: beans, corn, lettuce, avocado, tomatoes, onion, cheese, sour cream, hot sauce, and jalapeño. Garnish with cilantro and serve with lime wedges.
