Instructions
Heat olive oil in a large skillet over medium heat.
Cook onions and garlic until softened, then add ground beef and cook until browned. Drain excess fat.
Stir in spices, rice, beans, tomatoes, and broth. Simmer until rice is tender, about 15-18 minutes.
Sprinkle cheese over the top, cover, and let melt for 2-3 minutes.
Garnish with cilantro and green onions. Serve hot with optional toppings.
