A quick and flavorful one-pan meal combining seasoned ground beef, rice, beans, and cheese, perfect for a satisfying dinner.

Ingredients

Meat and Beans

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Optional Toppings

  • Fresh cilantro, chopped (optional)
  • Sliced green onions (optional)
  • Sour cream (optional)
  • Diced avocado (optional)
  • Salsa or hot sauce (optional)

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Cook onions and garlic until softened, then add ground beef and cook until browned. Drain excess fat.
  • Stir in spices, rice, beans, tomatoes, and broth. Simmer until rice is tender, about 15-18 minutes.
  • Sprinkle cheese over the top, cover, and let melt for 2-3 minutes.
  • Garnish with cilantro and green onions. Serve hot with optional toppings.

Notes

For extra flavor, add a squeeze of lime or your favorite hot sauce.
