A delicious and hearty dish featuring bell peppers stuffed with seasoned ground beef, rice, and cheese, baked to perfection.

Ingredients

Vegetables

  • 6 pieces large bell peppers (any color)
  • 1 cup cooked rice (white jasmine rice)

Pantry Items

  • 1 tablespoon olive oil
  • 0.5 medium onion (chopped)
  • 1 pound lean ground beef
  • 3 cloves garlic (minced)
  • 15 ounce crushed tomatoes or tomato sauce
  • 1 teaspoon Worcestershire sauce (optional)
  • 0.5 teaspoon Italian seasoning
  • 2 cups shredded cheddar cheese blend (divided)

Seasonings

  • to taste salt & pepper

Instructions 

  • Preheat oven to 400°F (200°C). Prepare peppers by cutting tops and removing seeds. Sauté onion and pepper tops in oil for 5 minutes.
  • Add ground beef to the skillet, cook until browned, then stir in garlic, tomatoes, Worcestershire, and Italian seasoning. Mix in cooked rice and half the cheese.
  • Stuff the peppers with the beef mixture, place in a baking dish with water at the bottom, cover with foil, and bake for 40 minutes.
  • Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 5-10 minutes until cheese melts. Broil briefly if desired.

Notes

You can prepare the rice ahead of time for quicker assembly.
