Healthy Cranberry Orange Bread

A moist and flavorful bread combining the tartness of cranberries with bright orange zest, perfect for breakfast or a snack.

Ingredients

Wet ingredients

  • 1/3 cup unsalted butter, melted and slightly cooled (or vegetable oil)
  • ½ cup pure maple syrup
  • ¼ cup freshly squeezed orange juice
  • 1 heaping tablespoon fresh orange zest
  • ¼ cup plain Greek yogurt (2% Greek yogurt)
  • 1 teaspoon vanilla extract
  • 2 eggs eggs, at room temperature

Dry ingredients

  • 1 ¾ cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 ½ cups fresh cranberries (rinsed and dried)

Glaze ingredients

  • 1 cup powdered sugar (icing sugar), sifted
  • ½ tablespoon butter, softened (optional)
  • 1 to 2 tablespoons orange juice or milk (plus more as needed)
  • 1 teaspoon orange zest
  • 1/8 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C), line and grease loaf pan.
  • Whisk wet ingredients, then add eggs and mix until smooth.
  • Mix dry ingredients, then combine with wet mixture. Fold in cranberries and pour into pan.
  • Bake for 45-55 minutes until a toothpick comes out clean. Cover with foil if browning too quickly.
  • Cool in pan for 10 minutes, then transfer to wire rack. Drizzle with orange glaze before serving.

Notes

For a richer glaze, add more powdered sugar or orange juice as needed.
