A moist and flavorful bread combining the tartness of cranberries with bright orange zest, perfect for breakfast or a snack.
Ingredients
Wet ingredients

unsalted butter, melted and slightly cooled
(or vegetable oil)

pure maple syrup

freshly squeezed orange juice

(2% Greek yogurt)

Dry ingredients

whole wheat flour

(rinsed and dried)
Glaze ingredients

powdered sugar (icing sugar), sifted

butter, softened
(optional)

orange juice or milk
(plus more as needed)

Instructions
Preheat oven to 350°F (175°C), line and grease loaf pan.
Whisk wet ingredients, then add eggs and mix until smooth.
Mix dry ingredients, then combine with wet mixture. Fold in cranberries and pour into pan.
Bake for 45-55 minutes until a toothpick comes out clean. Cover with foil if browning too quickly.
Cool in pan for 10 minutes, then transfer to wire rack. Drizzle with orange glaze before serving.
Notes
For a richer glaze, add more powdered sugar or orange juice as needed.
