Delicious and wholesome pecan pie bars made with almond flour and natural sweeteners, perfect for a healthy treat.
Ingredients
Crust

maple syrup (or honey)

pecans (coarsely chopped)

Cooking spray (I use Misto)
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 baking dish with parchment and spray with cooking spray.
Mix almond flour, cornstarch, cinnamon; add coconut oil and maple syrup. Press into dish and bake for 15 minutes.
Whisk eggs, coconut oil, maple syrup, vanilla, and cornstarch. Stir in pecans.
Pour filling over crust and bake for 15-20 minutes until firm. Cool for 30 minutes, then refrigerate for at least 4 hours.
Cut into 9 squares and serve chilled. Warm slightly for gooey bars if desired.
Notes
For best results, refrigerate overnight to set properly.
