Deliciously moist and wholesome, these pumpkin muffins are perfect for a healthy snack or breakfast.

Instructions
Preheat oven to 325°F (165°C) and line a muffin tin with paper liners.
Whisk oil and maple syrup in a large bowl, then add eggs and beat well.
Stir in pumpkin, milk, spices, baking soda, vanilla, and salt.
Fold in flour and oats until just combined—don’t overmix!
Divide batter into 12 cups, sprinkle with oats and turbinado sugar.
Bake for 22–25 mins until a toothpick comes out clean. Cool for 5 mins, then transfer to a rack.
Notes
For extra flavor, try adding nuts or chocolate chips to the batter!
