A nutritious twist on the classic comfort food, packed with lean turkey and vegetables, topped with creamy mashed potatoes and cauliflower.

Ingredients

Vegetables

  • 1.5 cups russet potatoes (peeled and chopped)
  • 1.5 cups cauliflower florets

Cheese

  • 0.25 cup grated parmesan cheese

Cooking Oils & Broth

  • 2 tablespoons olive oil
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 0.5 cup chicken broth (low or no salt)
  • 1 lb ground turkey
  • 1 cup diced onion
  • 1 tablespoon minced garlic (about 2 garlic cloves)
  • 0.5 cup diced carrots
  • 0.25 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon dried thyme
  • 0.5 cup low sodium chicken stock
  • 1 tablespoon tomato paste
  • 1 cup peas
  • 1 cup corn

Instructions 

  • Preheat oven to 350°F (175°C). Boil potatoes and cauliflower until soft, about 10 minutes.
  • Cook ground turkey with onions, garlic, and carrots until browned, about 10 minutes.
  • Add broth, tomato paste, rosemary, thyme, and frozen vegetables to the turkey. Simmer briefly.
  • Drain potatoes and cauliflower, then mash with olive oil, garlic powder, salt, pepper, and parmesan.
  • Layer turkey mixture in a casserole dish, top with mashed vegetables, and bake for 30 minutes until golden.

Notes

For a creamier topping, add a splash of milk or butter to the mashed potatoes and cauliflower.
