Instructions
Preheat oven to 350°F (175°C). Rub potatoes with oil and salt, then bake for 45 minutes.
Cool slightly, cut potatoes in half, and scoop out insides, leaving a small edge.
Place skins on parchment-lined sheet, bake for 10-15 minutes to crisp.
Mix potato insides with yogurt and hot sauce, then add beans and corn.
Stuff skins with mixture, bake again for 10-15 minutes, then top with desired toppings and serve warm.
Notes
For extra crispiness, bake the skins a second time after stuffing.
