A creamy, hearty soup packed with protein and vegetables, inspired by Panera Bread's popular dish.
Ingredients
Dairy and Broth

onion, finely diced

garlic, minced

all-purpose flour

low-sodium chicken or vegetable broth

milk

can (15 oz)
white beans, drained and rinsed

broccoli florets, chopped

carrots
shredded or finely diced

shredded sharp cheddar cheese

ground nutmeg, optional
to taste
Salt and black pepper
Instructions
Blend white beans with 1 cup of broth until smooth.
Melt butter in a large pot, cook onion for 3–4 minutes, then add garlic for 30 seconds.
Stir in flour and cook 1–2 minutes, then whisk in remaining broth, bean mixture, and milk.
Add broccoli and carrots, simmer 12–15 minutes until tender.
Remove from heat, stir in cheddar until melted, add nutmeg, season with salt and pepper, then serve.
Notes
For a creamier texture, blend some of the vegetables before adding cheese.
