High-Protein Broccoli Cheddar Soup (Panera Copycat)

A creamy, hearty soup packed with protein and vegetables, inspired by Panera Bread's popular dish.

Ingredients

Dairy and Broth

  • 4 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups milk
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups broccoli florets, chopped
  • 2 carrots shredded or finely diced
  • 2 1/2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon ground nutmeg, optional
  • to taste Salt and black pepper

Instructions 

  • Blend white beans with 1 cup of broth until smooth.
  • Melt butter in a large pot, cook onion for 3–4 minutes, then add garlic for 30 seconds.
  • Stir in flour and cook 1–2 minutes, then whisk in remaining broth, bean mixture, and milk.
  • Add broccoli and carrots, simmer 12–15 minutes until tender.
  • Remove from heat, stir in cheddar until melted, add nutmeg, season with salt and pepper, then serve.

Notes

For a creamier texture, blend some of the vegetables before adding cheese.
