High-Protein Strawberry Pancakes

Ingredients

Wet Ingredients

  • 1 cup milk (such as 2% or whole milk)
  • 2 teaspoons distilled white vinegar
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped fresh strawberries
  • 3 tablespoons coconut sugar (or pure cane sugar)
  • 3 tablespoons whole milk plain Greek yogurt
  • 1 large egg
  • 2 tablespoons melted butter
  • ¼ cup freeze-dried strawberry powder
  • ½ cup vanilla whey protein powder
  • ½ teaspoon fine sea salt
  • ½ tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup + 2 tablespoons whole wheat pastry flour (or all-purpose flour)
  • ¾ cup lightly crushed freeze-dried strawberries

Greasing

  • as needed Avocado oil or butter (for greasing the griddle)

Toppings

  • to taste chopped strawberries, maple syrup, butter, chocolate chips, sliced bananas, etc.

Instructions 

  • Add milk, vinegar, vanilla, strawberries, sugar, yogurt, egg, and melted butter to a blender. Blend until smooth, then let sit for 5 minutes.
  • Mix dry ingredients: strawberry powder, protein powder, salt, baking powder, baking soda, and flour in a bowl.
  • Combine wet and dry mixtures, then fold in crushed freeze-dried strawberries. Do not overmix.
  • Heat a greased skillet over medium heat. Pour ¼ cup batter for each pancake. Cook 2-3 minutes until golden, then flip and cook another 2-3 minutes.
  • Remove pancakes, keep warm if desired, and repeat with remaining batter. Serve hot with toppings.

Notes

For extra flavor, top with fresh strawberries and a drizzle of maple syrup.
