Hobo Casserole Ground Beef Recipe

A hearty and comforting casserole featuring layers of ground beef, potatoes, and cheese.

Ingredients

Meat

  • 1 pound ground beef

Vegetables

  • 4-5 medium potatoes, thinly sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Dairy

  • 1.5 cups shredded cheddar cheese
  • 0.5 cup grated parmesan cheese

Liquids

  • 0.5 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried italian seasoning
  • 0.5 teaspoon paprika
  • 0.25 cup milk (optional, for added creaminess)
  • 2 tablespoons fresh parsley, finely chopped

Seasoning

  • to taste salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a skillet, heat olive oil over medium heat. Brown ground beef for 5-7 minutes; drain excess fat.
  • Add onion and garlic; sauté for 3-4 minutes until onions are translucent.
  • Spread beef mixture in the baking dish. Layer potatoes on top, season with salt, pepper, Italian seasoning, and paprika.
  • Sprinkle cheeses over potatoes and pour beef broth around the edges.
  • Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for 15-20 minutes until golden.

Notes

For added creaminess, include milk in the recipe.
