A comforting and hearty soup made with tender turkey, fresh vegetables, and egg noodles, perfect for a cozy meal.

Ingredients

olive oil

  • 1 tablespoon olive oil

celery (chopped finely)

carrots (sliced in small circles)

  • 1.5 cups carrots (sliced in small circles)

garlic (minced)

  • 1/2 tablespoon garlic (minced)

cooked turkey (chopped)

  • 4 cups cooked turkey (chopped)

salt

  • 1/4 teaspoon salt

black pepper

  • 1/2 teaspoon black pepper

fresh rosemary (chopped)

  • 1 teaspoon fresh rosemary (chopped)

dried thyme

  • 1/4 teaspoon dried thyme

red pepper flakes (optional)

  • 1/4 teaspoon red pepper flakes (optional)

bay leaves

  • 4 bay leaves bay leaves

turkey or chicken broth (LOW or NO sodium)

  • 8 cups turkey or chicken broth (LOW or NO sodium)

egg noodles (about 8oz)

  • 3.5 cups egg noodles (about 8oz)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped celery, onion, and carrots until tender.
  • Add minced garlic, cooked turkey, broth, bay leaves, and seasonings; bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add egg noodles and cook until tender, about 8 minutes.
  • Remove bay leaves, adjust seasoning, and serve hot.

Notes

You can use leftover cooked turkey for added flavor.
