Instructions
Mix flour, sugar, salt, and cold butter; add ice water until dough forms. Chill 1 hour.
Prepare frangipane: cream butter and sugar, beat in egg, almond flour, flour, extracts, and salt.
Trim and halve/quarter figs; toss with honey, lemon juice, and salt.
Roll dough to 12-inch round, spread frangipane, arrange figs, fold edges, brush with egg wash, sprinkle toppings, chill 10 min.
Bake at 400°F (205°C) for 35–40 min until golden; brush warm honey over figs, rest 15 min, then slice.
Notes
Chill the dough well for best results and serve warm or at room temperature.
