A delightful tart combining sweet, jammy plums with a crisp pastry and rich almond cream, perfect for a special occasion or afternoon treat.

Instructions
Make pastry: combine cold butter, flour, powdered sugar, and salt; add egg yolk and cold water, chill 1 hour.
Roll dough, line tart pan, chill, then blind-bake at 375°F (190°C) for 20 minutes.
Prepare almond cream by beating softened butter and sugar, then mix in eggs, almond flour, vanilla, almond extract, flour, and salt.
Slice and pit plums; spread almond cream in tart shell, arrange plums on top.
Sprinkle with sugar and bake at 375°F (190°C) for 35–40 minutes until plums are jammy and almond cream is golden.
Cool, optionally brush with warmed apricot jam, then slice and serve.
Notes
Chill the dough thoroughly for best results and ensure plums are ripe but firm for optimal texture.
