A delightful tart combining sweet, jammy plums with a crisp pastry and rich almond cream, perfect for a special occasion or afternoon treat.

Ingredients

Dough

  • 1 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter (cold for crust)
  • 6 tbsp unsalted butter (softened for filling)
  • 2 large eggs (1 whole egg + 1 yolk)
  • 1 cup finely ground almond flour
  • 1/2 cup granulated sugar
  • 2 tbsp granulated sugar (for sprinkling)
  • 1 tbsp all-purpose flour (for almond cream)
  • 1 3/4 lb ripe but firm plums (8–10 medium)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • Pinch fine sea salt
  • 1 tbsp apricot jam (optional, for glaze)

Instructions 

  • Make pastry: combine cold butter, flour, powdered sugar, and salt; add egg yolk and cold water, chill 1 hour.
  • Roll dough, line tart pan, chill, then blind-bake at 375°F (190°C) for 20 minutes.
  • Prepare almond cream by beating softened butter and sugar, then mix in eggs, almond flour, vanilla, almond extract, flour, and salt.
  • Slice and pit plums; spread almond cream in tart shell, arrange plums on top.
  • Sprinkle with sugar and bake at 375°F (190°C) for 35–40 minutes until plums are jammy and almond cream is golden.
  • Cool, optionally brush with warmed apricot jam, then slice and serve.

Notes

Chill the dough thoroughly for best results and ensure plums are ripe but firm for optimal texture.
