A hearty and flavorful casserole perfect for using up leftover turkey, layered with tortillas, cheese, and a savory soup mixture.

Ingredients

Canned Soups and Broth

  • 1 can condensed cream of chicken soup
  • 1 can condensed cream of mushroom soup
  • 2 cups chicken broth
  • 1 can Rotel
  • 1 small can chopped green chiles
  • 1 package corn tortillas
  • 3 cups cooked, diced turkey (can substitute chicken)
  • 2 teaspoons Canola or vegetable oil
  • 1 medium onion (chopped)
  • 1 red bell pepper chopped
  • 1 jalapeno seeded and diced
  • 2 cloves garlic (pressed)
  • 8 ounces shredded cheddar cheese
  • 1.5 teaspoons chili powder

Instructions 

  • Preheat oven to 350°F (175°C).
  • Soak tortillas in broth, then cut into strips.
  • Saute onion and bell pepper in oil until soft, then add garlic and cook briefly.
  • Mix soups, Rotel, chiles, and jalapeno with 2 cups broth.
  • Layer tortillas, turkey, vegetables, and cheese in a dish, repeat layers, then pour soup mixture over.
  • Bake for 30-45 minutes, adding remaining cheese 10 minutes before done.

Notes

Use leftover turkey for a quick and delicious meal.
