A flavorful and creamy lemon chicken gnocchi dish that's quick to prepare and perfect for a comforting meal.

Ingredients

Protein

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning ((see note))
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach (packed)

Salt & pepper

Instructions 

  • Slice chicken in half lengthwise, season with garlic powder and lemon pepper. Sear in oil and butter until golden and cooked through, then set aside.
  • Add garlic to the skillet and cook briefly, then stir in chicken broth and lemon juice, scraping brown bits from the pan.
  • Pour in cream and gnocchi, simmer uncovered for 5-7 minutes until thickened and gnocchi is cooked, stirring occasionally.
  • Remove from heat, stir in parmesan and spinach until wilted, then add chicken back and spoon sauce over. Season with salt and pepper, serve immediately.

Notes

Ensure not to pre-cook the gnocchi to allow it to release starch and thicken the sauce naturally.
