Delicious loaded beef nachos with melted cheeses, fresh toppings, and flavorful seasoned beef, perfect for sharing.

Ingredients

Base

  • 12 oz tortilla chips (sturdy restaurant-style)
  • 1 lb ground beef (80/20 blend)
  • 15 oz pinto or black beans (canned, drained and rinsed)

Cheese

  • 2 cups shredded cheddar cheese (freshly shredded)
  • 1 cup shredded Monterey Jack cheese (freshly shredded)

Seasonings & Oils

  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper (adjust to taste)
  • 1 lime lime (juiced)

Fresh Toppings

  • 2 roma roma tomatoes (diced)
  • 0.5 red red onion (finely diced)
  • 2-3 jalapeños jalapeños (sliced fresh or pickled)
  • 0.5 cup fresh cilantro (roughly chopped)
  • 2 green onions green onions (sliced)

Dips & Sides

  • 1 cup sour cream
  • 1 cup guacamole
  • 0.5 cup salsa or pico de gallo

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet.
  • Cook ground beef with seasonings until browned, then add lime juice.
  • Layer half the chips, beef, beans, and cheeses on the tray; repeat for second layer.
  • Bake 10–12 minutes until cheese melts and bubbles.
  • Top with diced tomatoes, red onion, jalapeños, cilantro, and green onions. Serve with dips.

Notes

For extra flavor, add a squeeze of lime and fresh toppings just before serving.
