Kosher salt and black pepper, to taste
Instructions
Preheat oven to 425°F (218°C) and line a sheet pan with parchment or foil.
Toss fries with olive oil, 1 tsp smoked paprika, salt, and pepper. Bake 25-30 minutes, flipping once, until crisp.
Warm shredded chicken with 1/2 cup barbecue sauce and remaining paprika; add water if needed.
Spread fries on the pan, layer with cheese, BBQ chicken, remaining cheese, and jalapeños. Bake 5-7 minutes until cheese melts.
Drizzle with remaining barbecue sauce, garnish with green onions and cilantro, and serve with sour cream.
Notes
For extra flavor, add a dash of hot sauce or extra herbs.
