A flavorful and crispy sheet pan dish combining spicy fries, tender BBQ chicken, and melty cheese, perfect for sharing.

Ingredients

Main Ingredients

  • 32 oz frozen extra-crispy French fries
  • 1 tbsp olive oil
  • 1.5 tsp smoked paprika, divided
  • 3 cups cooked shredded chicken (rotisserie or leftover)
  • 1 cup barbecue sauce, divided
  • 0.25 cup water (as needed to loosen sauce)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack or pepper Jack cheese
  • 0.5 cup pickled jalapeño slices, drained
  • 0.25 cup thinly sliced green onions
  • 0.25 cup chopped fresh cilantro (optional)
  • 0.5 cup sour cream or Mexican crema, for serving

Seasonings

  • Kosher salt and black pepper, to taste

Instructions 

  • Preheat oven to 425°F (218°C) and line a sheet pan with parchment or foil.
  • Toss fries with olive oil, 1 tsp smoked paprika, salt, and pepper. Bake 25-30 minutes, flipping once, until crisp.
  • Warm shredded chicken with 1/2 cup barbecue sauce and remaining paprika; add water if needed.
  • Spread fries on the pan, layer with cheese, BBQ chicken, remaining cheese, and jalapeños. Bake 5-7 minutes until cheese melts.
  • Drizzle with remaining barbecue sauce, garnish with green onions and cilantro, and serve with sour cream.

Notes

For extra flavor, add a dash of hot sauce or extra herbs.
