  • 6 large Russet Potatoes (Cut into thin fries)
  • 1 spray Olive Oil Spray
  • 1 pound Lean Ground Turkey Breast
  • 1.5 cup Kraft Fat Free Cheddar Cheese (Shredded)
  • 1 cup Canned Black Beans, Drained and Rinsed
  • 1 cup Diced Tomato
  • 0.5 cup Chopped Green Onions
  • 0.5 cup Plain Fat Free Greek Yogurt
  • 1 Tbsp Taco Seasoning
  • to taste Salt/Pepper Salt/Pepper
  • 2 Tbsp Fresh Cilantro, Chopped

Instructions 

  • Preheat oven to 425°F (220°C). Toss fries with olive oil spray, salt, and pepper; bake for 25-30 minutes, flipping halfway.
  • Cook ground turkey with taco seasoning in a skillet over medium heat until browned.
  • Transfer fries to a serving platter. Top with shredded cheese, cooked turkey, black beans, and diced tomatoes.
  • Return to oven for 3-5 minutes until cheese melts. Garnish with green onions, Greek yogurt, and cilantro. Serve immediately.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
