Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Mix flour, cornstarch, baking soda, salt, cinnamon, and cream of tartar. Set aside.
Cream butter, brown sugar, and granulated sugar until light. Add syrup, egg, and maple extract; beat well. Mix in dry ingredients.
Combine sugar and cinnamon for coating. Scoop dough, roll in cinnamon sugar, and place on baking sheets.
Bake for 11-13 minutes until edges are set but centers are soft. Cool on wire racks.
Notes
For best results, do not flatten the dough balls to keep cookies thick and chewy.
