A flavorful and colorful baked chicken dish inspired by Mediterranean flavors, perfect for a wholesome meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces (Juicy, tender protein base.)

Vegetables

  • 2 medium zucchinis, sliced into half-moons (Adds vibrant green hue and subtle crunch.)
  • 1 cup cherry tomatoes, halved (Provides sweetness and natural acidity.)

Aromatics & Oils

  • 2 cloves garlic, minced (Elevates flavor complexity.)

Herbs & Spices

Instructions 

  • Preheat oven to 400°F (200°C).

  • Spread mixture in a baking dish and bake for 20-25 minutes.
  • Sprinkle cheeses and parsley on top, then bake for an additional 5 minutes until melted.
  • Serve hot, garnished with extra parsley if desired.

Notes

For a spicier version, increase red pepper flakes or add a dash of hot sauce.
