Instructions
Pound chicken to even thickness, then whisk olive oil, lemon juice, garlic, herbs, paprika, salt, and pepper to make marinade.
Marinate chicken with sliced onion and lemon in a bag for at least 30 minutes.
Cook chicken in a hot skillet or grill for 5–7 minutes per side until golden and internal temp reaches 74°C. Add reserved lemon and onion slices during cooking.
Rest the chicken for 5 minutes, then serve topped with sautéed onions, lemon slices, and chopped parsley.
