A flavorful and juicy Mediterranean-inspired chicken dish, perfect for a quick and healthy meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 60 ml extra virgin olive oil
  • 1 large lemon juice
  • 3 cloves garlic (minced)
  • 1 tbsp fresh oregano
  • 1 tsp dried thyme
  • 0.5 tsp smoked paprika
  • 0.5 tsp sea salt
  • 0.25 tsp freshly ground black pepper
  • 1 medium red onion
  • 1 whole lemon (for slices and juice)

Fresh herbs

  • a handful fresh parsley (for garnish)

Instructions 

  • Pound chicken to even thickness, then whisk olive oil, lemon juice, garlic, herbs, paprika, salt, and pepper to make marinade.
  • Marinate chicken with sliced onion and lemon in a bag for at least 30 minutes.
  • Cook chicken in a hot skillet or grill for 5–7 minutes per side until golden and internal temp reaches 74°C. Add reserved lemon and onion slices during cooking.
  • Rest the chicken for 5 minutes, then serve topped with sautéed onions, lemon slices, and chopped parsley.

Notes

Use a meat thermometer to ensure perfect doneness.
