Enjoy these flavorful chicken quesadillas with melted cheese and crispy tortillas, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 3-4 pieces boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced

Cheese

  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese

Dairy & Grains

  • 4 large flour tortillas
  • 2 tbsp olive oil

Instructions 

  • Season chicken with salt, pepper, and minced garlic. Cook in olive oil over medium-high heat for 6-7 minutes per side until cooked through.
  • Shred the cooked chicken once cooled.
  • Layer cheese and shredded chicken on half of each tortilla, then fold in half.
  • Cook each quesadilla in the skillet with a little olive oil for 3-4 minutes per side until golden and melty.
  • Rest briefly, then slice into triangles and serve with sour cream mixed with hot sauce.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime.
