Instructions
Heat oil in a skillet, cook onion for 2 min, add garlic and beef until browned.
Stir in tomato paste, taco seasoning, salt, pepper; cook 1 min. Add rice, broth, salsa, beans, corn; stir.
Simmer covered for 15 min, adding more broth if needed. Top with cheese and cover for 2 min before serving.
