Delicious layered oatmeal bars with a rich fudge topping, perfect for a sweet treat.

Ingredients

Dough and Base

  • 0.5 cup unsalted butter, room temperature
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1 egg room temperature egg
  • 1 cup old fashioned oats
  • 1 cup all purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.75 teaspoon salt

Fudge Layer

  • 0.5 cup sweetened condensed milk (about half a 14 oz can)
  • 0.5 cup semisweet chocolate chips
  • 1 tablespoon unsalted butter
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  • Beat butter and sugars until fluffy, then add vanilla and egg; mix well.
  • Combine oats, flour, baking soda, baking powder, and salt; add to wet ingredients and mix.
  • Press half of dough into pan; make fudge layer by melting condensed milk, chocolate chips, and butter, then stir in salt and vanilla.
  • Spread fudge over dough, crumble remaining dough on top, then bake for 25-30 minutes until golden. Cool and cut into 9 bars.

Notes

For best results, let the bars cool completely before slicing.
