A quick and flavorful seafood dish featuring shrimp, corn, and cherry tomatoes roasted to perfection with Old Bay seasoning.

Ingredients

Protein

  • 1.5 pounds jumbo shrimp (peeled and deveined, tail-off)

Vegetables

  • 4 ears corn (shucked and kernels removed)
  • 1 pint grape or cherry tomatoes

Seasonings & Oils

  • 2 tablespoons extra-virgin olive oil (divided)
  • 2 teaspoons extra-virgin olive oil (divided)
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon kosher salt (divided)
  • 1 lemon zest of 1 lemon

Fresh herbs & citrus

  • 2 tablespoons chopped fresh chives
  • 1 lemon lemon cut into wedges for serving

Instructions 

  • Preheat oven to broil on high, 6 inches from heat, and line a sheet pan with foil.
  • Toss corn with 1 tablespoon olive oil and 1/2 teaspoon salt on the prepared sheet; spread evenly.
  • Broil until corn chars in spots, tossing halfway, about 6-7 minutes. Remove from oven.
  • Pat shrimp dry, toss with 2 teaspoons olive oil, garlic, Old Bay, lemon zest, and ½ teaspoon salt.
  • Spread shrimp over corn, add tomatoes, drizzle with remaining oil, and broil until shrimp are opaque and tomatoes burst, about 7-8 minutes.
  • Top with chives and serve with lemon wedges.

Notes

Use fresh ingredients for best flavor and adjust seasoning to taste.
