One Pot Chicken Parmesan Pasta

A quick and hearty one-pot meal combining tender chicken, pasta, and cheesy marinara sauce for a satisfying dinner.

Ingredients

Protein

  • 2-3 pieces boneless skinless chicken breasts (diced into bite-sized pieces)
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder

Vegetables

  • 1 medium yellow onion (minced)
  • 3 cloves garlic (minced)

Pasta

  • 16 oz dried short-cut pasta ((e.g., rigatoni))

Sauce

  • 24 oz jar of marinara sauce (your favorite brand)
  • water to fill jar water (fill empty marinara jar)

Cheese

  • 1 cup mozzarella cheese
  • 0.5 cup parmesan cheese
  • to taste salt and pepper (for seasoning)
  • additional dried Italian seasoning optional (for garnish)
  • for garnish fresh parsley and/or basil (minced)

Instructions 

  • Heat olive oil in a large pot, cook chicken with seasonings for 5 minutes, then remove.
  • Sauté onion and garlic, add marinara and water, bring to boil, then simmer.
  • Add chicken and pasta, cook covered for 10-15 minutes, then stir in parmesan and part of the mozzarella.
  • Top with remaining mozzarella, cook 2-3 minutes until melted, then garnish with herbs.

Notes

Use freshly grated cheese for best flavor.
