Instructions
Heat olive oil in a large pot, cook chicken with seasonings for 5 minutes, then remove.
Sauté onion and garlic, add marinara and water, bring to boil, then simmer.
Add chicken and pasta, cook covered for 10-15 minutes, then stir in parmesan and part of the mozzarella.
Top with remaining mozzarella, cook 2-3 minutes until melted, then garnish with herbs.
Notes
Use freshly grated cheese for best flavor.
