A creamy, flavorful one-pot dish combining tender chicken, orzo, sun-dried tomatoes, and herbs for a comforting meal.

Ingredients

Base

  • 455 g boneless, skinless chicken breast, chopped into bite-sized pieces, raw
  • 3 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • 1.5 teaspoons paprika
  • 0.5 teaspoon oregano
  • 0.5 teaspoon thyme
  • 0.25 teaspoon chilli flakes
  • 200 g orzo, dry
  • 600 ml chicken stock (additional if needed)
  • 80 g sun-dried tomatoes, drained from oil
  • 60 g reduced fat cream cheese
  • 120 ml half and half
  • 50 g Parmesan, grated
  • a handful fresh basil, chopped

Instructions 

  • Heat a large pan and spray with olive oil. Cook chicken until golden, then set aside.
  • In the same pan, sauté onion and garlic until softened. Add spices and cook for 30 seconds.
  • Stir in orzo and cook until translucent. Add stock and simmer until absorbed and orzo is cooked.
  • Return chicken to pan, add sun-dried tomatoes, cream cheese, and half and half. Stir until creamy and heated through.
  • Mix in Parmesan and basil, season with salt and pepper, then serve.

Notes

Use fresh basil for best flavor and adjust seasoning as needed.
