A delicious gluten-free upside-down cake featuring fresh peaches and a hint of vanilla, perfect for a summery dessert.

Ingredients

Dry ingredients

  • 1 1/2 cups Flour, Gluten free 1:1
  • 3/4 cup coconut sugar or granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet ingredients

  • 1 1/2 tsp vanilla extract
  • 5 tbsp unsweetened applesauce or avocado oil
  • 1 tsp apple cider vinegar
  • 1 cup water
  • 1 cup diced fresh peaches

Additional

  • Brown sugar Brown sugar for dusting

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8×8 inch (20×20 cm) baking dish.
  • Sprinkle a thin layer of brown sugar over the bottom. Arrange peaches evenly on top.
  • Mix dry ingredients in a bowl. In another, combine wet ingredients. Pour wet into dry and stir gently.
  • Pour batter over peaches, dust with extra brown sugar. Bake for 35–40 minutes until golden.
  • Cool for 10–15 minutes, then flip onto a plate. Serve warm.

Notes

Use ripe peaches for the best flavor and texture.
