A delicious and hearty bowl combining seasoned ground beef, sautéed vegetables, rice, and creamy cheese sauce for a quick and satisfying meal.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 tablespoon butter (sub plant-based butter)
  • 1/2 red onion red onion (thinly sliced)
  • 1 green bell pepper green bell pepper (thinly sliced)
  • 1 red bell pepper red bell pepper (thinly sliced)
  • 4 cups cooked rice
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1-2 teaspoons garlic (minced)
  • 1.5 cups half-&-half or creamer
  • 1 cup white cheddar cheese (shredded)
  • 1/2 teaspoon ground mustard
  • 1 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Instructions 

  • Cook ground beef in a skillet until fully browned; drain excess grease.
  • Sauté onions and peppers in butter until softened, then set aside.
  • Make cheese sauce: melt butter, whisk in flour and garlic, then slowly add half-&-half, stirring until smooth. Remove from heat and stir in cheese, mustard, salt, and pepper.
  • Assemble bowls with beef, veggies, rice, and top with cheese sauce. Serve and enjoy!

Notes

For a dairy-free version, use plant-based cheese and creamer.
