A delicious and hearty bowl combining seasoned ground beef, sautéed vegetables, and creamy cheese sauce over rice for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 pound ground beef (seasoned with salt and pepper)
  • 1 tablespoon tablespoon butter (sub plant-based butter)
  • 1/2 red onion red onion (thinly sliced)
  • 1 green bell pepper green bell pepper (thinly sliced)
  • 1 red bell pepper red bell pepper (thinly sliced)
  • 4 cups cups cooked rice
  • 2 tablespoons tablespoons butter
  • 3 tablespoons tablespoons all-purpose flour
  • 1-2 teaspoons teaspoons garlic (minced)
  • 1 1/2 cup cups half-&-half or creamer
  • 1 cup cup white cheddar cheese (shredded)
  • 1/2 teaspoon teaspoon ground mustard
  • 1 teaspoon teaspoon kosher salt
  • 1/8 teaspoon teaspoon ground black pepper

Instructions 

  • Cook ground beef in a skillet until fully browned; season with salt and pepper, then set aside.
  • Sauté onions and bell peppers in butter until softened, then remove and set aside.
  • Make cheese sauce by whisking flour and garlic into melted butter, then gradually adding half-&-half and melting in cheese with seasonings.
  • Assemble bowls with rice, beef, veggies, and top with cheese sauce. Serve and enjoy!

Notes

Feel free to customize with additional toppings like jalapeños or hot sauce for extra flavor.
