A warm, cheesy bread filled with cranberry sauce and thyme, perfect for sharing at gatherings.

1piecebread boule (round loaf of rustic bread)
1wheelbrie (about 12 ounces, top of rind removed)(use triple cream if possible)
0.5cupwhole berry cranberry sauce
2tablespoonsfresh thyme leaves
2tablespoonsolive oil
to tastekosher salt
to tastefresh ground pepper
Instructions
Preheat oven to 350°F (175°C).
Slice the top quarter of the bread and scoop out the middle to create a hollow.
Cut slices around the edge of the bread about 1.5 inches apart, not cutting all the way through.
Brush the inside with olive oil, season with salt, pepper, and half of the thyme. Place brie in the hollow, spoon cranberry sauce on top, then cover with the bread top.
Bake for 20 minutes, then serve immediately with toasted bread pieces from the scooped-out middle.
Notes
Line the baking sheet with foil to catch any cheese oozing out.
