Delightful pumpkin-flavored cookies sandwiched with creamy frosting, perfect for fall treats or special occasions.
Ingredients
Dough
2 1/4cupsall-purpose flour
1teaspoonbaking soda
1 3/4teaspoonsground cinnamon
1/2teaspoonkosher salt
1/4teaspoonground ginger
1/8teaspoonground nutmeg
1/8teaspoonground cloves
1cupunsalted butter (room temperature)
3/4cuplight brown sugar
3/4cupgranulated sugar
1cuppure pumpkin puree
2teaspoonspure vanilla extract
1 3/4cupsold-fashioned oats
Filling
1/2cupunsalted butter
8ozfull-fat cream cheese (room temperature)
1teaspoonpure vanilla extract
1/4teaspoonsalt
4cupsconfectioner’s sugar
Instructions
Preheat oven to 350°F (175°C). Line baking sheet with parchment or silicone mat.
Mix dry ingredients in a bowl. Beat butter and sugars until smooth. Blot pumpkin, then add to mixture with egg yolk and vanilla; beat well.
Gradually add dry ingredients, then stir in oats. Drop dough onto baking sheet and bake for 12-14 minutes. Cool completely.
Make browned butter by melting butter until nutty and browned, then cool. Beat with cream cheese, vanilla, and salt. Gradually add confectioner’s sugar until smooth.
Spread or pipe frosting on half of the cookies, then top with remaining cookies to assemble.
Notes
Chill the frosting slightly before assembling for easier spreading.
