Instructions
Preheat a nonstick skillet over medium heat and lightly oil.
Mix dry ingredients: flour, sugar, baking powder, baking soda, salt, and spices.
Whisk wet ingredients: milk, pumpkin, egg, melted butter, and vanilla.
Combine wet and dry: stir until just mixed, then let sit for 5 minutes.
Cook pancakes: pour 1/4 cup batter onto skillet, cook 2-3 mins, flip, cook 1-2 mins until golden.
