Ingredients

Base

  • 0.5 cup rolled oats
  • 0.5 cup non-dairy milk or regular milk
  • 0.25 cup non-dairy yogurt or regular yogurt (optional)
  • 0.25 cup pumpkin puree (not pie filling)
  • 1 tbsp maple syrup
  • 0.5 tbsp chia seeds
  • 1 tsp vanilla extract
  • 0.5 tsp pumpkin spice
  • 0.25 tsp ground cinnamon (optional)
  • 0.125 tsp salt

Toppings

  • Chopped pecans
  • Whipped cream
  • Yogurt
  • Granola

Instructions 

  • Add oats, milk, yogurt (if using), pumpkin, maple syrup, chia seeds, vanilla, pumpkin spice, cinnamon, and salt to a jar. Mix well and seal.
  • Refrigerate overnight or at least 4 hours.
  • Stir the oats before serving; add a splash of milk if needed.
  • Top with chopped pecans, whipped cream, yogurt, and granola as desired. Serve and enjoy!
