Fluffy and nutritious pumpkin protein pancakes perfect for a cozy breakfast. Made with wholesome ingredients and optional chocolate chips for extra flavor.

Ingredients

Eggs

  • 2 large large eggs

Pumpkin Puree

  • 0.25 cup pumpkin puree (not pumpkin pie filling!)

Greek Yogurt

  • 0.5 cup Greek yogurt (2% or 5% plain or vanilla (0% works too))

Almond/Oat Milk

  • 0.666 cup almond milk or oat milk

Maple Syrup

  • 2 tbsp pure maple syrup

Vanilla Extract

  • 1.5 tsp pure vanilla extract

Old-Fashioned Rolled Oats

  • 2 cup old-fashioned rolled oats

Baking Powder

  • 2 tsp baking powder

Pumpkin Pie Spice

  • 1.5 tbsp pumpkin pie spice

Chocolate Chips (Optional)

  • 0.33 cup chocolate chips (optional mix-in)

Instructions 

  • Add all ingredients into a blender and blend until combined. Let sit for 5-8 minutes.
  • Heat a nonstick pan over medium heat and lightly oil.
  • Pour 1/4–1/3 cup batter onto pan, add chocolate chips if desired, and cook 1–2 minutes until edges are crisp.
  • Flip and cook for another minute until golden. Serve with maple syrup.

Notes

For fluffier pancakes, let the batter rest before cooking.
