Greek Yogurt
0.5cupGreek yogurt (2% or 5% plain or vanilla (0% works too))
Almond/Oat Milk
0.666cupalmond milk or oat milk
Maple Syrup
2tbsppure maple syrup
Vanilla Extract
1.5tsppure vanilla extract
Old-Fashioned Rolled Oats
2cupold-fashioned rolled oats
Baking Powder
2tspbaking powder
Pumpkin Pie Spice
1.5tbsppumpkin pie spice
Chocolate Chips (Optional)
0.33cupchocolate chips(optional mix-in)
Instructions
Add all ingredients into a blender and blend until combined. Let sit for 5-8 minutes.
Heat a nonstick pan over medium heat and lightly oil.
Pour 1/4–1/3 cup batter onto pan, add chocolate chips if desired, and cook 1–2 minutes until edges are crisp.
Flip and cook for another minute until golden. Serve with maple syrup.
Notes
For fluffier pancakes, let the batter rest before cooking.
