Wet Ingredients

  • 1.5 cups granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree ((not pumpkin pie filling))
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts or pecans (optional)
  • pumpkin seeds (for topping (optional))

Instructions 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, whisk together the dry ingredients.
  • In a separate bowl, whisk together the wet ingredients.
  • Combine wet and dry ingredients, mixing until just combined.
  • Fill muffin cups about 2/3 full and add toppings if desired.
  • Bake for 18-20 minutes, then cool on a wire rack.

Notes

For extra flavor, consider adding chocolate chips or dried cranberries.
