A delicious Mexican cheese dip with chorizo, roasted poblano, and fresh toppings, perfect for sharing with tortilla chips or warm tortillas.

Instructions
Broil the poblano until charred, steam, peel, and dice.
Preheat oven to 400°F (200°C). Cook chorizo until browned, then set aside.
Sauté onion and roasted poblano in oil until translucent. Mix with chorizo.
Layer half the cheese in a skillet, add chorizo mixture, then top with remaining cheese. Bake until bubbly and browned, about 8-10 minutes.
Garnish with cilantro and tomatoes. Serve with chips or tortillas.
Notes
For a milder flavor, roast the poblano longer and remove seeds thoroughly.
