A flavorful and easy one-pot meal combining smoked beef sausage, rice, and vegetables for a satisfying dinner.
Ingredients
Meat

Smoked beef sausage

Long-grain white rice

Yellow onion, finely diced

Minced garlic

bell pepper
Bell pepper (red, green, or yellow)

Beef or chicken broth

Diced tomatoes (undrained)

Instructions
Slice sausage, dice onion and bell pepper, and mince garlic. Measure rice and broth.
Brown sausage in a large pot, remove and set aside. Sauté onion, bell pepper, and garlic in the same pot.
Add rice to the pot, toast for 2-3 minutes. Pour in broth and tomatoes, season with spices, and bring to a boil.
Return sausage to the pot, reduce heat, cover, and simmer for 18-20 minutes. Rest for 5 minutes.
Fluff rice, garnish with parsley if desired, and serve.
Notes
For extra flavor, add a splash of hot sauce or a squeeze of lemon before serving.
