A flavorful and easy one-pot meal combining smoked beef sausage, rice, and vegetables for a satisfying dinner.

Ingredients

Meat

  • 1 lb Smoked beef sausage
  • 1.5 cups Long-grain white rice
  • 1 medium Yellow onion, finely diced
  • 3 cloves Minced garlic
  • 1 bell pepper Bell pepper (red, green, or yellow)
  • 4 cups Beef or chicken broth
  • 1 can Diced tomatoes (undrained)
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Italian seasoning or dried thyme
  • 1/4 teaspoon Cayenne pepper or red pepper flakes (optional)
  • 1/2 cup Frozen peas or corn (optional)
  • 2 tablespoons Fresh parsley, chopped (optional)

Instructions 

  • Slice sausage, dice onion and bell pepper, and mince garlic. Measure rice and broth.
  • Brown sausage in a large pot, remove and set aside. Sauté onion, bell pepper, and garlic in the same pot.
  • Add rice to the pot, toast for 2-3 minutes. Pour in broth and tomatoes, season with spices, and bring to a boil.
  • Return sausage to the pot, reduce heat, cover, and simmer for 18-20 minutes. Rest for 5 minutes.
  • Fluff rice, garnish with parsley if desired, and serve.

Notes

For extra flavor, add a splash of hot sauce or a squeeze of lemon before serving.
