A fresh and hearty quinoa salad with crisp apples, dried cranberries, and candied walnuts, perfect for any season.

Ingredients

Broth & Grains

  • 1 1/2 cups vegetable broth
  • 3/4 cup tricolor quinoa, (rinsed)

Add-ins

  • 1/2 cup dried cranberries
  • 1 gala apple apple, (diced into 1/4 inch cubes)
  • 1/4 cup celery, (diced into 1/4 inch cubes)
  • 1/4 cup fresh parsley, (chopped)
  • 1/4 cup candied walnuts

Dressing

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon maple syrup
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, (minced)
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions 

  • Bring broth and quinoa to a boil, add cranberries, cover, and remove from heat. Let stand 15 minutes, then fluff and transfer to a bowl.
  • Whisk together olive oil, maple syrup, mustard, vinegar, garlic, allspice, salt, and pepper to make the vinaigrette.
  • Mix the cooked quinoa with the vinaigrette, then add diced apple, celery, parsley, and walnuts. Serve at desired temperature.

Notes

This salad is versatile and can be served hot, room temperature, or cold. Perfect for a light lunch or side dish.
