This simple roasted acorn squash recipe brings out the natural sweetness with caramelized edges and a hint of maple syrup. Perfect as a cozy side dish or vegetarian main.

2mediumAcorn squash((~2 lb each))
2tbspOlive oil
3/4tspSea salt
1/4tspBlack pepper
2tbspMaple syrup
2tbspButter(optional)
Instructions
Preheat oven to 425°F (218°C). Line a baking sheet with foil or parchment.
Slice squash in half lengthwise, scoop out seeds, and place cut side up on the sheet.
Drizzle with olive oil, sprinkle with salt and pepper, then flip cut side down.
Roast for 20-30 minutes until tender but slightly resistant when poked.
Optional: Flip squash cut side up, drizzle with maple syrup, and roast for an additional 5-10 minutes.
Remove from oven, add butter to each half if desired, and serve.
Notes
For extra flavor, sprinkle with herbs or cinnamon before roasting.
