A classic and impressive main course, this roasted prime rib is seasoned with fresh herbs and cooked to perfection for a tender, flavorful meal.

Ingredients

Meat

  • 4.5 kg 10 pound bone-in prime rib roast

Liquid

  • 240 ml water (or beef broth)

Dairy

  • 227 g unsalted butter (softened)

Herbs & Spices

  • 2 tablespoons fresh rosemary (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • 2 tablespoons fresh Italian parsley (chopped)
  • 8 cloves garlic (crushed)
  • 2 teaspoons sea salt
  • 2 teaspoons ground black pepper

Instructions 

  • Bring the beef to room temperature for 1-2 hours.
  • Preheat oven to 450°F (232°C).
  • Mix butter, herbs, garlic, salt, and pepper into a paste. Rub under the bones and over the roast.
  • Place in a roasting pan with water, roast at 450°F for 20 minutes, then reduce to 250°F and cook for 12-15 min per pound until internal temp reaches 122°F.
  • Rest the roast for 30 minutes, then slice and serve.

Notes

Use a meat thermometer for best results and let the meat rest before slicing.
