  • 1 whole chicken (about 4–5 lbs)
  • 2 tbsp olive oil or melted butter
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 lemon lemon (halved)
  • 4–5 garlic cloves garlic cloves (smashed)
  • Fresh herbs (like rosemary or thyme, optional) (optional)

Instructions 

  • Preheat oven to 425°F (220°C).
  • Rub the chicken with olive oil, salt, pepper, garlic powder, paprika, and thyme.
  • Stuff the lemon halves and smashed garlic cloves inside the cavity.
  • Place the chicken in a roasting pan and roast for about 90 minutes, until golden and cooked through.
  • Let rest for 10 minutes before carving. Serve with fresh herbs if desired.

Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
