Instructions
Drizzle oil over garlic, wrap in foil, and roast at 350°F (180°C) for 60-90 minutes until tender and golden.
Heat oil in a large pot, cook diced onion until tender, about 5-7 minutes.
Add chopped garlic and cook for 1 minute until fragrant.
Add broth, beans, and rosemary; bring to a boil, then simmer for 5 minutes.
Squeeze roasted garlic into the soup and blend until smooth. Stir in Parmesan and lemon juice, season with salt and pepper.
Notes
For a creamier texture, blend the soup longer or add a splash of cream.
