A hearty and flavorful baked dish combining smoked sausage, rice, vegetables, and cheese for a satisfying meal.

Ingredients

Meat

  • 1 pound smoked sausage (sliced (like kielbasa, brats, or other cooked smoked sausage))
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion (chopped)
  • 2 bell peppers bell peppers (diced (any color))
  • 2 cloves garlic (minced)
  • 1 14-ounce can diced tomatoes with green chilies (drained)
  • 1 cup frozen peas
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup sharp cheddar cheese (shredded)
  • Chopped fresh parsley (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Brown sliced sausage in a skillet, then set aside.
  • Sauté onion, peppers, and garlic until softened.
  • Add rice, broth, tomatoes, peas, and spices; simmer 5 minutes. Stir in sausage.
  • Transfer to a greased baking dish, cover, and bake 25-30 minutes. Top with cheese and bake 5-10 minutes until melted. Garnish with parsley.

Notes

For extra flavor, add a pinch of smoked paprika or hot sauce.
