Instructions
Preheat oven to 375°F (190°C).
Brown sliced sausage in a skillet, then set aside.
Sauté onion, peppers, and garlic until softened.
Add rice, broth, tomatoes, peas, and spices; simmer 5 minutes. Stir in sausage.
Transfer to a greased baking dish, cover, and bake 25-30 minutes. Top with cheese and bake 5-10 minutes until melted. Garnish with parsley.
Notes
For extra flavor, add a pinch of smoked paprika or hot sauce.
